Chaala Curry


Ethakka Vilayichathu

Ingredients:
  1. Ripe Bananas
  2. Sugar
  3. Ghee
  4. Cardamon

Preparation:

Parsley Salad

  1. Fresh parsley - 1 bunch.
  2. Red Onions - 3
  3. Green Chilly - 1
  4. Salt - to taste
  5. Olive oil - 2Tbsp
  6. Pepper powder - 1 tsp
  7. Lime - 1
Method

  • Wash and dry the parsley 
  • Finely cut parsley, onions and chiliy
  • Mix them together and season with salt, pepper and lime juice.
  • Drizzle olive oil on top and serve with any kind of kebab or barbecued meat

I would like to share a simple way of making an arabic dish named as "Manakish". The original version of this Manakish requires a thandoori oven which will not be available at our houses. So to make this dish at home in an easy and healthy way please read below.
Items required.
  1. Wheat flour - 2 cups
  2. Zatar - 4 tablespoon
  3. Olive oil-2 tablespoon
  4. Roasted white seasame seed- 1 tablespoon.
  5. Water  -as required
  6. Salt- to taste

  1. Mixing bowl to mix the wheat flour in a fluid state.
  2. A small soup bowl to mix the Zatar, olive oil and seasame seed.

Ingredients:
  • 2 cups Gram Flour (besan)
  • 3 tablespoons semolina flour (fine sooji)
  • 1 1/2 cup Sugar (grinded)
  • 1 cup Ghee
  • 1 tsp Cardamom powder
  • 1 tsp Almonds (chopped)
  • 1 tsp Pistachios (chopped)
  • 1 tsp Cashew Nuts (chopped)
  • 1 tsp raisins
Preparation

  • Fry Almonds, Pistachios, Cashews and Raisins in Ghee and keep aside.
  • Roast Sooji and keep aside
  • Roast Besan and keep aside
  • Grind sugar into fine powder. While grinding sugar add half a tsp of cardamom powder, it will give a nice flavour to the sugar.

  • Put Ghee in a vessel and melt it
  • Add besan flour and sooji to this
  • Add the powdered sugar
  • Mix everything and finally add Cardamom powder, Almonds, Pistachios, Cashews and Raisins
  • Allow it to cool for 10 minutes and start making balls out of it.

Falafel


Harees

Harees is an arabic dish usually made in the Ramadan time. After fasting ends in the evening this can be a main dish or a side dish. Usually the preparation of this takes two to three hours, but here we are mentioning a quicker version of Harees. Thanking you for following our ingredients and steps of cooking.

Ingredients:

  1. 2 Cup Harees / Whole Wheat
  2. 1/2 kg Lamp meat / Mutton
  3. Salt - upto your taste
  4. 25gms Unsalted butter
  5. 1 inch Cinnamon Stick
  6. 3 Cardamom
  7. 2 Dates

Preparation:

  1. Wash and then Soak the harees/wheat in water for 8 to10 hours
  2. Drain the soaked harees using a strainer.
  3. Remove the bones from the lamp meat.
  4. Make sure that there are no particles of bone in the meat.
  5. Wash the meat, cut into very small pieces and transfer it to a pressure cooker.
  6. Transfer the wheat also to the pressure cooker.
  7. Now pour water to the pressure cooker such that water will just cover the wheat and meat in the pressure cooker.
  8. Close the pressure cooker with the lid
  9. Switch on the stove and keep in a low flame (important, otherwise the wheat will get burned to the bottom of the vessel.) for 35 minutes.
  10. Switch off the burner and wait for 10 minutes , then try to lift the whistle of the pressure cooker to make sure that the pressure cooker is free from steam inside.
  11. Now transfer a portion of cooked wheat+meat to a wet grinder (usually you use for grinding dosa/idly dough)
  12. Grind it (if the griding is difficult, add little amount of warm water and grind)
  13. Transfer it to a serving bowl, and butter and mix it.
  14. In a small pan melt butter and add cardamom, dates, and cinnammon. Leave it for 2 minutes and then sieve it. 
  15. Make a small pond in the middle and pour the butter and Serve
  16. Enjoy the delicious Harees.

തയ്യാർ ചെയ്യുന്ന വിധം 
  1. അധികം പഴുക്കാത്ത ഏത്തയ്ക്ക ആവിയിൽ വേവിച്ചെടുക്കുക.
  2. തേങ്ങയും പഞ്ചസാരയും കൂടി ചേർത്ത് ഇളക്കി വയ്ക്കുക 
  3. ഏത്തയ്ക്ക ചെറു ചൂടോടുകൂടി കയ്യിൽ വച്ച് ഉടച്ചു പരത്തി എടുക്കുക 
  4. പരത്തിയ ഏത്തയ്ക്കയിലേക്ക് തേങ്ങയും പഞ്ചസാരയും ഇട്ട് മടക്കി എടുക്കുക .

Unnakkaya

Ingredients

Banana - 6 nos
Raisins - 3 Tbsp
Cashews - 3 Tbsp
Egg - 2 nos
Grated Coconut - 1 Cup
Sugar - 1/2 Cup
Cardamon - 6nos
Ghee - 1 tsp
Oil - for frying

Method
  1. Boil the bananas. Allow it to cool. Remove the seeds and then mash it nicely. Dont use mixie for it.
  2. Make small balls of this mashed banana.
  3. For the filling mix two eggs, sugar and some cardamon powder
  4. Heat tawa and put Ghee. Add cashewnuts, raisins. and the egg mix and cook nicely. Allow it to cool.
  5. Apply some ghee in our palm and flatten the banana ball, make it a circle and add the fillings to it. 
  6. Cover from the sides and make it an oval shape with pointed edges.
  7. Heat a  kadai, Add coconut oil and fry it until it turns golden brown color

Banana - 5 Nos

Method
  1. For Sun Dried Bananas, choose ripen bananas
  2. Slice them into thin pieces around half a centimeter
  3. Arrange the slices in a flat metallic plate
  4. cover with a thin cotton cloth
  5. Keep in direct sunlight for 5 days
  6. Every next day turn the slice and put the other side up

Once the bananas are dried, they can be stored in an air tight container. They can be used as dried fruits or as banana candies. Sun Dried Bananas are tastier than the ripen bananas and also they are good for helth

Rotini Pasta

How to prepare Italian pasta?

Have you ever thought of the tasty italian pasta can be made in your own kitchen. Yes it's very easy to prepare. Follow the receipe below and try , you will wonder about  your talent in cooking.

1)Raw materials required
1.1) Rotini-  two cups (measuring cup)
1.2) Tomato- 2nos
1.3) Big Onion-2nos
1.4) Carrot- 1nos
1.5) Green peas-1cup (if you get fresh/ frozen green peas that is better, if not soak it for 6 to 8hrs in water before you start preparing pasta)
1.6) Chicken stock / Vegetable stock - 1nos ( you can ask for Maggie or any other brand )
1.7) Chicken masala/Vegetable masala- 1 tablespoon
1.8) Oregano- 1/2 teaspoon
1.9) Olive oil- 3 teaspoon

2) Equipments required
2.1) Sauce pan - 1nos (medium size )
2.2) Spatula- 1nos
2.3) Sieve- 1 nos
2.4) Non stick Frying pan -1 nos

3) Procedure
3.1) Take half litre of water in the sauce pan.
3.2) Put over the flame on your stove.
3.3) Bring it to boiling.
3.4) Put half of a chicken stock/ vegetable stock to the boiling water. (this is already salty, so usually no need to add extra salt)
3.5) Slowly transfer the Rotini from the bowl to the boiling water.
3.6) Boil the rotini for 15minutes
3.7) Remove from stove and pour to the strainer.
3.8) Place a pan over the stove and make it hot
3.9) Put a tablespoon of vegetable oil.
3.10) Chop the onions and transfer to the pan.
3.11) Saute for 5 minutes.
3.12) Chop the tomato and transfer to the pan.
3.13) Saute both onion and tomato for 5 minutes.
3.14) Put the green peas also to the pan and saute for 5minutes.
3.15) Grate the carrot and transfer to the pan.
3.16) Put a little salt (upto your taste)
3.17) Saute for another 2minutes.
3.18) Pour 1/2 cup of water and let it come to boil.
3.19) Now put the curry masala (veg/ chicken masala).
3.20) Transfer  the rottini already cooked  from the strainer to the pan.
3.21) Mix it well with the spatula.
3.22) Now sprinkle the oregano and mix well with the spatula.
3.23) Switch off the flame.
3.24) Pour the oilve oil.
3.25) Serve in a bowl to your family, friends and guests.

Method
  1. ഓറഞ്ചും നാരങ്ങയും മുറിച്ചു അതില്‍ നിന്നും നീര് എടുക്കുക.
  2. അതിലേക്ക്‌  ഇഞ്ചി  നീരും , പഞ്ചസാരയും , വെള്ളവും  ചേര്‍ത്ത് നന്നായി ഇളക്കുക.

Lemon 1 small
Ginger 1/4 tsp
Sugar to taste
Water 1/2 cup
Ice cubes 4 to 5 small cubes

  1. Cut oranges and lemon and squeeze to extract juice from it.
  2. To this, add ginger, sugar and water and mix it well
  3. Filter and add ice cubes and serve.

Orange Sponge Cake
    4 eggs
    1 cup sugar
    3/4 cup flour
    2 tablespoons orange juice
    1/2 teaspoon orange extract
Beat the eggs until they are light and lemon-colored.
Gradually add the sugar.
Sift the flour into the sugar mixture.
Add the orange juice and orange extract.
Pour batter into a tube pan or loaf pan.Bake at 350ºF/180ºC for approximately 30 minutes

      Ingredients
Serve for four people
  1. Tomato - 2nos
  2. Cucumber-2nos
  3. Beetroot - 1 no
  4. Carrot - 1nos
  5. Parsley (leaves)- 1cup
  6. Jarjeer (leaves)- 1/2 cup
  7. Lettuce- 2 petals
  8. Red Kidney Beans- 1cup
  9. Mushroom- 3 nos
  10. Chick peas- 1 cup
  11. Lemon-2 nos
  12. Salt- as per your requirement
  13. Pepper powder- 1 teaspoon
Tools required.
  1. Cutting board
  2. Knife
  3. Salad bowl.
  4. Grater.
  5. Pressure cooker / sauce pan
  6. Strainer
  7. Kitchen Scissors
  8. Lemon juice extractor / squeezer
Preparation:
  1. Soak red kidney beans in water for about 8 hrs.(Note: Don't soak if you bought tinned red kidney beans)
  2. Soak chick peas in water for about 8hrs.(Note: Don't soak if you bought chick peas).
  3. Wash tomato, cucumber, carrot, parsley, jarjeer, lettuce etc throughly and Dip in a bowl of water for atleast one hour.(This is to get rid of the pesticides and all other poisonous material which was applied by the farmer which you are not aware).
  4. Simultaneously you can cook red kidney beans and chick peas, by adding a two cups of water and a 1/2 teaspoon of salt in a pressure cooker in a low flame. ( will do this in 15minutes)
  5. Peel the beetroot skin with a peeler, and boil it in a sauce pan for 15 minutes.Let it cool. Slice it into thin pieces.
  6. Wash the mushroom under the tap using running water.
  7. Cut the mushroom to thin pieces
  8. In two cups of water, boil the mushroom pieces for 5minutes and keep it aside.
  9. Now remove the items mentioned in line no:3 from water and keep over a strainer for 10minutes.
  10. Cut tomato into small cube pieces and put in the mixing bowl.
  11. Cut cucumber into small cube pieces and put in the mixing bowl.
  12. Grate carrot and put in the mixing bowl.
  13.  Take parsley and pluck the leaves and chop the leaves with a knife. ( the stem you can throw away).
  14. Take jarjeer and remove the stem in the bottom of the leaf and chop using a knife.
  15. Take lettuce and remove the steam and chop the leaves using a sharp knife.
  16. Transfer the parsley , lettuce and jarjeer to the mixing bowl.
  17. Now open the pressure cooker and drain the excess water and get the boiled red kidney beans out and transfer it to the mixing bowl.
  18. Now do the same way as you had done for red kidney beans  for chick peas also.
  19. Trasfer the mushroom also to the mixing bowl after draining the excess water.
  20. Transfer the sliced beetroot also.
  21. Now cut the lemon into two halves and squeeze it with the juice extractor( this is not the motorized orange , apple juice extractor).
  22. Pour the lemon juice to mixing bowl.
  23. Now add little salt ( the quantity of salt is upto you, usually one teaspoon will be ok, if you don't have an idea.
  24. Add one teaspoon of black pepper powder to the mixing bowl.
  25. Now mix everything with your hand for one minute.
  26. Now transfer your salad to a serving bowl.
  27. Enjoy the tasty and healthy salad.
